Thai Fish with Pineapple

Serves 4

250g Hake, chopped in squares

1 can of ‘Light’ coconut milk

1 large pineapple, crushed in a liquidizer or food processor 

1 tablespoon fish sauce

1 teaspoon Thai red curry sauce



200g jasmine rice

500ml water



  1. Put the rice in a large saucepan, pour in enough cold water to cover the rice by a few centimeters and bring to the boil.

  2. Reduce the heat to a simmer and continue to cook very gently with the lid on until the water has been absorbed.

  3. Whilst the rice is cooking combine the coconut milk, pineapple, fish sauce and red curry sauce in a large pan and bring to the boil.

  4. Add the fish and simmer for about 5 minutes until the fish is cooked through. 5/

  5. Serve with the rice and green vegetables.
