Fish Cakes

 

 

Serves 4

Use any fish which is high in Omega-3 oils like mackerel, haddock, salmon or tuna

 

Ingredients

3 fish fillets of your choice, de-boned and skinned

a small handful of breadcrumbs

1egg

juice of a lemon

a few sprigs of parsley or coriander

salt to taste

olive oil

 

Method

  1. Put all the ingredients except the olive oil into a food processor and mix well. Don’t overdo the mixture of it will become mushy.

  2. Remove the ingredients and make them into round patties a little smaller than the size of a burger.

  3. Cook them in a frying pan with a little olive oil until they are golden brown and crispy on the outsid

  4. Tip: To make your own breadcrumbs: put two slices of wholewheat bread in the food processor which makes roughly a handful of crumbs.
